Fancy This Fridays PUMPKIN Features! Special Edition

So in honor of Pumpkin Week we wanted to do a special features post! I’ve combed through recent Fancy This Fridays link ups and have pulled out some WONDERFUL pumpkin ideas! Here they are!

Pumpkin Muffins with Chocolate Ganache

Let me tell you a little story.

Once upon a time there was a girl who  was quite excited to try a couple pumpkin recipes, so she went out and bought pumpkin puree and set off on a fantastic pumpkin adventure. It all started great but alas, there was a disappointing turn of events. One recipe was a total bust. In my defense it was actually a microwave recipe and the oven is my domain. I was disappointed but the next recipe, pumpkin muffins, gave me much less trouble. The recipe was actually for baked donuts but I didn’t have a pan and the author of the original recipe said you could make muffins instead. She DID say that they were much better as doughnuts because of the crispy outside, cakey inside ratio but that it was do-able. I have to admit that when I pulled the muffins out and took a test bite, I felt like something was missing. I needed another element- the first thing that came to mind was cream cheese drizzle. (Which you should totally try by the way, because I’m sure it would be DELICIOUS. I think I’ll try it myself next time.)  I didn’t have cream cheese this time around but I DID have chocolate chips! (:  In the madness a wonderful creation was born, pumpkin muffins with chocolate ganache. For the original doughnut/muffin recipe you can go here. Keep in mind you want pumpkin puree NOT pumpkin pie filling.

 

For the muffins:

Mix together in a bowl

  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 1/2 cups sugar
  • 1 1/2 cups pumpkin puree (Just pumpkin NOT pumpkin pie filling)
  • 1 1/2 tsp. pumpkin pie spice
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. baking powder

Once smooth, gradually add in

  • 1 3/4 cups PLUS 2 tbs. of all purpose flour

Bake at 350* for roughly 25 minutes

I originally rolled mine in cinnamon sugar which did add in a different texture, if you want to do that make sure to do it while the muffins are still warm so it sticks on there. (:

For the ganache:

  • Chocolate chips (I used a mixture of semi-sweet and milk)
  • Milk (or sweetened condensed)

The fact of the matter is, there are a lot of ways to make ganache. You can do a double boiler method and melt your chips using a pie pan over a pan of boiling water, you can microwave the chips and do it that way. You can use regular milk, you can use sweetened condensed, you can make it thicker by using less milk or thinner by adding more, if it doesn’t have the right consistency go ahead and add more chips or milk and get it where you want it. I trust you’ll figure it out. (: I ended up doing mine in the microwave in the interest of saving some time, I put the chips and milk in a small bowl and microwaved them for 30 seconds then stirred until smooth. If they don’t melt quickly when stirred put them back in for another 10 seconds until they do.

Then I drizzled the chocolate on top of the muffins using a spoon and prayed they would be as delicious as they looked.

Sweet success! Turns out I LOVE pumpkin and chocolate.

Pumpkin Dump Cake

Welcome to Day 2 of…

I have another delicious pumpkin recipe to share with you!!!
See day one of Pumpkin Week on Truly Lovely here with a delicious Pumpkin Cheesecake Recipe!

This recipe for Pumpkin Dump Cake comes from .
They call them Pumpkin Pie Bars… But after making this yummy myself, I think it favors a dump cake more than bars.

Pumpkin Pie Dump Cake

The ingredients needed to Pumpkin Dump Cake are:

Bottom Layer Ingredients:

  • 1 large can of pumpkin (29 oz)
  • 1 cup of milk
  • 1 cup of sugar
  • 2 eggs
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 tsp salt

Top Layer Ingredients:

  • 1 yellow cake mix
  • 3/4 cup of chopped walnuts
  • 1 1/2 sticks of butter, melted

First mix together all the ingredients for the bottom layer. Pour into a greased, 9 x 13 baking dish or pan.
Your bottom layer will look like so…

Next you’ll want to spread the dry yellow cake mix over the top of your bottom layer (I just shook it out of the cake mix bag so that it covered the entire bottom layer). Then top the cake mix with the chopped walnuts.
Finally pour the melted butter all over the top layer. At this point your cake will look like this…

Bake in a 350 degree oven for 45-55 minutes or until golden brown.

It’s completely AMAZING served while warm… I’m also betting it would be delightful topped with a little whipped cream!

No Bake Pumpkin Cheesecake

Since we have officially declared this last week of September, the first week of Autumn… as…

Let’s get things rolling today with one of my favorite pumpkin recipes!
No Bake Pumpkin Cheesecake!

No Bake Pumkin Cheesecake Recipe

The ingredients needed for Pumpkin Cheesecake are:

  • 1 8 oz. package of softened cream cheese
  • 1 cup of canned pumpkin (about half a 15 oz can)
  • 1/2 cup of sugar
  • 1/4 tsp of ground cinnamon
  • 1/4 tsp of ground ginger
  • 1/4 teaspoon nutmeg
  • 1 graham cracker pie crust
  • 1 tub of whipped cream topping

Quick Tip: Make SURE your cream cheese is REALLY soft! If not, it will make for a very lumpy cheesecake!

Combine all ingredients, minus the whipped cream in a large bowl. I used my KitchenAid mixer.

Mix all ingredients together until fully combined. Now, fold in about half the tub of whipped cream topping. {Save the rest for cheesecake topping later on.}
Spread your cheesecake mix into the graham cracker pie crust.

At this point you can take cool cheesecake reflection pictures in your metal mixing bowl if your like me… 😉
Or just refrigerate your pretty orange cheesecake for at LEAST 3 hours. Otherwise, it’s really hard to get out a decent slice…

Once you do cut a slice, top with a dollop of the left over whipped cream topping and enjoy!

Cowboy Baby Shower Games

Today is the final chapter in my Little Cowboy Baby Shower series!
To wrap it up, how about some baby shower games!
You can see an overview of the entire shower here, the chocolate favors that I made here, and what I wore here.

I kept the games fairly simple. You’ve seen this photo before, but what you can see here is that one of our main ‘games’ was to have each guest write their address on an envelope and put it in a bowl. From there we drew out names to win door prizes. This ‘game’ as it were,  saves Mommy to be from having to address thank you notes or hunt down addresses for her guests!

Another of the games we played was ‘Guess the Items for Baby Cowboy‘. I took several baby items, nine in fact, and put them in a brown paper bag, labeled them with a number and stapled them shut. Shower guests were able to pass the bags around, try to feel what was inside and then write down their guess.

Once each of the nine bags had made the rounds Mommy to be opened them. If a shower guest had guessed the right item they got a point. Most points won a prize! The items I used included a bottle, pacifiers, baby socks, etc. To make things a little tougher I purchased one of those travel kits that includes baby items like shampoo, baby wash, powder, etc. Because most of the bottles were shaped alike, it was a little harder to guess which was what! As an added bonus, at the end Mommy to be got to keep all of the baby items!!!

Baby shower tip: I had a box of cheapo pens on hand so guests weren’t searching for one… You know how that goes at most showers… There’s never enough things to write with!

I also created some printables that guests could write their answers on. I printed this game and another that I’ll talk about shortly on each side of a paper. So when it came time to play we passed out the papers to each guest, they played the first game, turned their paper over and played the next game!

Because I love you, you can access all the . It’s in Google docs, so you’ll need to download the file, then re-space the items to your liking before you print them out. :) The file includes sheets for the guess the items game, numbers for the guessing bags, AND sheets for Mommy and Daddy Trivia, the third game we played.

For Mommy and Daddy Trivia, I emailed the mommy to be a set of questions to answer before the shower.
Questions I asked included; Where did Mommy/Daddy grow up? What was Mommy and Daddy’s first date? Who did Mommy tell about baby first? Who did Daddy tell first? What was Mommy/Daddy’s favorite book?
The person that answered the most correctly won a prize. Don’t forget to have a tie breaker question or two!!! We needed one and had to have Mommy to be make one up on the spot! 😉

So that’s it! The Little Cowboy Shower was SO SO much fun! Hope you find my tips and ideas helpful for YOUR next baby shower!
